Whew – that’s the longest post title I think I’ve ever done! In my post yesterday I talked about decorating and setting up for the perfect Southern Summer Soiree – and today I’m going to talk about the food I made for the one I hosted. I knew I wanted easy but delicious foods that I could throw together for a few of my mommy friends coming over. I decided on Crockpot BBQ Pulled Chicken, which I knew the babies would love, and Pasta Salad, which I knew all the mamas would gobble up. I received so many compliments on my pasta salad and guess what my secret for the perfect pasta salad is? Betty Crocker Suddenly Salad Pasta Salad!

Seriously this Pasta Salad is the best. And it’s a breeze to make! Simply boil water, cook noodles, mix water and oil with powder to create the dressing and stir it into your noodles and you’re done. Yes, that means all you have to have is cold water and vegetable oil in addition to your box of Suddenly Salad. It’s that easy. And pasta salad makes the perfect side for a Southern party. It goes perfectly with any type of grilling out or barbecue.

Since my husband wasn’t home for this soiree and I can’t grill myself (I can’t even turn on the grill) I went with my favorite Crockpot BBQ Pulled Chicken recipe for the main course. This is a recipe I’ve made since my husband and I were newlyweds and I think it just gets easier and easier. I turned on the crockpot to high heat, placed 3 chicken breasts in it, and let them cook for 3 1/2 hours. By then they were done and juicy and fell apart easily when shredded with a fork. I cooked them in about 1/4 cup water and with my favorite rub sprinkled on top.

Then I served the chicken with barbecue sauce on the side and some buns and everyone loved them.

  7. Wow!! Everything looks delicious and now I'm super hungry. However, I most want to try the California Chicken BLT Salad. Bacon in a salad? That's an immediate winner in my book.

  167. I would like to try the Pineapple Upside-Down Cupcakes. They are clever and traditional, not to mention, they look simple to make. I would add a dab of whipped cream to each and a cherry on top.
