Brunch is the best. I mean breakfast food at lunch usually shared with friends? It’s great! We do a lot of brunch play dates and usually each mom brings a different dish to share. If this isn’t part of your mom meetups I highly recommend implementing it. Since I never have a lot of time I always go for quick, easy, but still delicious recipes, and my brunch bites take the cake. Packed full of flavour and take less than 30 minutes to both prepare and bake, they’re a real winner in my book. Plus these are great for making the night before and simply reheating in the morning. And right now you can save $1 on the Brown ‘N Serve I used for this recipe when you shop at Walmart using the Ibotta app!
Here’s what you need:
(1) Package Brown ‘N Serve Original Links, thawed
(3) Cups Egg Beaters
(3/4) Cup Cheddar Cheese
(1) Can Refrigerated Biscuits
Here’s what you do:
Grease two mini muffin pans and preheat the oven to 350 F.
Open one row of Brown ‘N Serve links and cut into slices.Begin breaking off pieces of biscuit dough and pressing into flat quarter size pieces. Put one in the bottom of each mini muffin pan slot.
In a large bowl mix the Egg Beaters, cheddar cheese, and Brown ‘N Serve. Top each biscuit piece with mixture until slot is full.
Place in oven for 15 minutes or until bites are starting to brown on top. Remove and allow to cool before serving. Enjoy!
