Alright guys. I’m a little terrified about this, but I’ve committed to doing Whole30 for the month of January. If you aren’t familiar with Whole 30, essentially it is 30 days without any dairy, grains, sugar, or alcohol. The idea is to cleanse your body and to focus on eating whole and nutritious foods. Is it going to be hard? Yes. But I’ve also been through childbirth and it can’t be harder than that. Can it? We will find out. As part of this process I’ve spent a lot of time researching what I can eat, what I can’t, and figuring out which recipes I need to try out. One of my favorite meals is an avocado toast at a restaurant near here. Clearly I can’t completely recreate it while on Whole30 – in order to be Whole30 compliant I had to remove the grains from it, so in their place I used potato slices! So not only does this awesome dish knock off the eating healthy resolution I have for 2017, but it also helps with the saving money resolution because it means I can eat out less! And everything I used for it I bought on my weekly shopping trip at my local Kroger. Ours is seriously around a mile from our house and I can pick up everything I need to feed my family, and fill our pantry, for the week!
So here’s what you need (makes 4):
4 Eggs
1/4 Cup Almond Milk (read the label to make sure you buy one without sugar added)
1 Large Potato, thinly sliced
2 Ripe Avocados, peeled and cored
1/4 Cup Olive Oil
1 Teaspoon Salt
1/4 Lemon
Here’s what you do:
Preheat oven to 350 degrees. Lay the potato slices on a baking sheet coated with olive oil. Coat the top side with olive oil as well. Sprinkle with salt, and put the sheet in the oven for 15-20 minutes, until potatoes and soft.
While potatoes are baking in a blender or food processor combine avocados and almond milk, and squeeze juice from the lemon slice in as well. Blend until well mixed but still slightly chunky.
Baste the eggs on a griddle so that egg whites are well cooked and yolk in still runny. The easiest way to do this is to crack the egg on a preheated griddle, and place a glass lid over the egg.
Line up 3 potato slices and top with the avocado mix. Top with the basted egg. Serve and enjoy – this dish is a lot of deliciousness!
Even my sometimes picky 2.5 year old daughter ended up eating most of mine so this is definitely something we will be repeating in our house. It’s perfect for breakfast, brunch, or those of us who like breakfast for dinner!
