In early January I was all about being Whole30 complaint. Fun fact: I lasted a whopping 6 days on Whole30. It was not for me (I might write a whole post on that one of these days). But there were some things that stuck with me, the biggest being simple ways I can cut back on sugars. And so many salad dressings are full of sugar, it’s insane! At many restaurants the dressing can make the salad one of the least healthy items on the menu! Which is why I started looking for ways to make my own vinaigrette recipe. I love having salads for lunch and dinner so finding dressings that I love and are as healthy as possible is key.
My favorite salad to make at home? I take spinach, fresh mozzarella, grilled chicken, fried onions and it’s just deliciousness in my mouth. I could seriously eat this salad every day and not get sick of it, as long as I’ve got a good vinaigrette recipe to put on it! And that’s exactly what I came up with here! I was worried this dressing would be too bland but it is actually full of flavor and really, really yummy (and totally Whole30 compliant for those of you still on it)!
Here’s what you need to make this deliciousness:
1/3 Cup Olive Oil
2/3 Cup Zico Coconut Water
2 Tablespoons Golden Vinegar
2 Tablespoons Lemon Juice
1 Teaspoon Dried Basil
1 Teaspoon Dried Parsley
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
Here’s all you do:
Combine ingredients in a glass jar or salad shaker and shake well. Pour over salad and enjoy!
See? I told you it was easy.
