It’s been a while since I’ve posted a recipe here. To be honest it’s been a while since I cooked at all around home, or posted on here at all. 3 kids has proved to be quite a transition. And 3 kids under the age of 5 is just pure chaos. But my dad came to visit us the weekend before we left for Disney World for a brief visit. And as we didn’t feel up to taking all the kids out to dinner the night before we left for a big trip I needed something yummy to serve for my visiting family members but also something easy and quick so that we could spend as much time together as possible.
When we need a quick but casual dinner for guests (especially guy guests) I always go for some type of fun sandwich recipe. I had some Curly’s Baby Back Pork Ribs in the fridge and looked around for other things already around our house. With just a few ingredients I was able to whip up some delicious sandwiches that everyone gobbled do
Wanna give these a try yourself? Here’s what you need:
1 Pack Curly’s Baby Back Pork Ribs
2 Avocados, sliced
1 Package Monterrey Jack Cheese
Buns
And here’s what you do:
Heat the Curly’s ribs in the microwave until done, following directions on the package.
While ribs are heating up, place buns in the oven on broil setting for 2 minutes.
Pull meat from bones of ribs.
Place rib meat on bun and sprinkle cheese on top. Place back in oven on broil setting for 2 minutes.
Once removed from oven add avocado slices and whatever else you please.
Serve and enjoy!

The rib meat from the Curly’s Baby Back Pork Ribs is tender, melt in your mouth, and amazing. The sauce it’s in is also amazing. Everyone at our house for this meal was a big fan of the sandwiches too. Great food and not having to take guests out to eat with 3 kids? That’s a win for me!
