Anyone else loooove breakfast food? I mean I eat breakfast foods morning, afternoon, night… whenever. Since I’m on a mission to eat a little healthier, I’m sharing one of my current favorites things to make – avocado breakfast muffins. I actually make these more for lunch than I do for breakfast but they are so delicious I would eat them any time.
What do you need?
1 Thomas’® English Muffin
1 Ripe Avocado
2 Tablespoons Plain Greek Yogurt
5 Drops Lemon Juice
2 Egg Whites
What do you do?
Peel and core avocado. Cut into small pieces and add to bowl. Also add the yogurt and lemon juice, and mash together well with a fork.
Fry egg whites in a small pan and toast bottom half of English muffin. Layer the egg on top of the muffin and then the avocado mash.
