Cinco de Mayo is coming up FAST and anyone who knows me knows that it is easily one of my favorite holidays. It’s also really close to my birthday so every year I want a Cinco de Mayo celebration! We used to go out for it but since having a baby it’s easier just to have friends over to celebrate and prepare some Mexican food myself. I always get stressed out about throwing parties and having people over so I love being able to just throw some Delimex Taquitos and Tacos in the oven. Delimex uses time-honored traditions to create easy Mexican meals that save you time in the kitchen which makes them life-savers in my book.
I like creating a yummy white sauce to drizzle over my tacos and taquitos for serving and for dipping. This is a sauce similar to one I make for enchiladas that is deliciously creamy with just the right amount of spice, and ridiculously easy to make.
Here’s what you need:
1 Cup Sour Cream
1/4 Cup of Your Favorite Salsa
1 Cup Half and Half
2 Tablespoons Butter or Margarine
2 Tablespoons Flour
Here’s what you do:
1) Over medium low heat melt your butter. Once melted stir in flour with a fork.
2) Pour in half and half and sour cream. Beat until well mixed with a whisk. Stir in salsa. Allow to cook about 5 minutes beating constantly. Do not allow sauce to boil.
3) Remove from heat and allow to cool. Drizzle of tacos and taquitos and put remaining sauce in a bowl for dipping. Enjoy!
