I’ve been trying very hard lately to eat healthy. And it’s paying off! I have more energy, have lost weight and am just happier when I stick with healthier foods. My biggest struggle is Mexican food. I love it but there aren’t many healthy options. Since I love celebrating Cinco de Mayo with friends I need both healthy and non-healthy options to serve. With the help of Old El Paso and Avocados from Mexico I can whip up easy and yummy healthy recipes for those of us who prefer them.
