My husband and I were talking last night about holiday traditions and the bittersweet aspect of them changing over time. It’s sad to lose holiday traditions of childhood, but exciting and fun to start our own as a family. This is the first year we are having Christmas at our house for the first time – and where we are sad to change it up from how we spent Christmas as children, it’s really exciting to be starting our own traditions and memories as a family.
One big tradition from my childhood, and still today, is my dad always making 7 layer cookies for the holidays. I decided to make some to package up for little gifts alongside Hallmark Ornaments, but wanted to put a spin on them to give them some fall flavor by adding pumpkin and cinnamon.
Here’s what you’ll need:
2 Cups Graham Cracker Crumbs (about 15 crushed crackers)
1 Cup Pureed Pumpkin
1 Tablespoon Cinnamon
1/2 Cup Sliced Almonds
2 Cups Semi-Sweet Chocolate Chips
2 Cups Butterscotch Chips
2 Cups Sweetened, Shredded Coconut Flakes
1 14 Ounce Can Sweetened Condensed Milk
Here’s what you’ll do:
Preheat oven to 350 Degrees F. Line a 9″ x 13″ pan with foil, and spray with oil.
Press graham cracker crumbs into bottom of pan to form the crust. In a large bowl, mix pumpkin, condensed milk, cinnamon and almond slices. Spread evenly on top of graham cracker crumbs.
Spread chocolate chips on top of the pumpkin mixture, and then butterscotch chips. Finally top with the coconut flakes.
Bake in oven 35-40 minutes. Allow to cool. Place in refrigerator at least 1 hour to set.
Serve and enjoy, or wrap up and gift alongside an adorable Hallmark Ornament!

These sound similar to one of my family's traditional Christmas cookie recipes! Ours don't have pumpkin or sliced almonds though…bet these are good too!
