I’m a big fan of food trucks. Lucky for me, I live in Atlanta where there are more than enough delicious food trucks. One of those awesome food trucks has a barbecue pork quesadilla. I love it so much that I knew I had to learn how to make it at home. And make it even more yummy. So I played around in the kitchen a little bit, tried out some different flavors, and came up with the perfect pulled pork quesadilla.
Here’s what you need to make 1 BBQ pulled pork quesadilla:
1 package Curly’s West Coast IPA Style Pulled Pork
1/8 cup diced purple onions, grilled
1/4 cup Monterrey Jack shredded cheese
1/4 cup butter (or vegetable oil)
Here’s what you do:
(1) In a large heat oil over medium heat. On a plate layer cheese, onions and pulled pork over half the tortilla. Sprinkle a little cheese on top as well.
(2) Cook for 4-5 minutes, until brown, in the oil/butter. Flip to the other side and cook an additional 2-3 minutes until brown. Remove and serve with salsa and sour cream.
This is seriously super delicious and great to serve when you have guests or to eat any night just because. I can’t imagine someone not loving this flavor combination, this pulled pork quesadilla is just so good.
