Tailgate Ice Cream Sandwiches

I love football watching parties, whether I’m hosting or attending, and to me it’s always important to have or bring the right foods. There must be something edible that resembles a football (or something football-related) and there must be something large and hearty that will fill everyone up. Today I’ll be showing you how to make tasty and adorable ice cream sandwiches in the shape of footballs, and how Stouffer’s® Party Sized Lasagna with Meat and Cheese compliments them and can help you feed all your guests easily!

I’m really excited about sharing this recipe because it’s fun, easy and impressive. Lots of times I make recipes several times before sharing them to make sure they turn out perfect. I’d made this cookie recipe before, it’s my go to, but wasn’t sure that the cookies would actually hold the shape of footballs when cooked. They did though and they turned out even better than I was aiming for. So next time you throw a football watching party or go to one make sure you bring these babies along to help get everyone in the game watching spirit!

Here’s what you need:

 
-8 Oz Bag Butterfinger® Peanut Butter Cups Minis
-1 Cup Butter, Softened
-2 Eggs
-2 Cups Sugar
-3 Teaspoons Pure Vanilla Extract
-2 Cups All Purpose Flour 
-1 Cup Unsweetened Cocoa Powder
-1 Teaspoon Baking Powder
-1 Teaspoon Salt
-Edy’s Grand Ice Cream Touchdown Sundae
Here’s what you do:
1) Preheat oven to 350°F.
2) Cream butter and sugar until smooth. Beat in eggs once at a time, and then the vanilla. In a separate bowl combine salt, cocoa powder, flower, baking soda, and slowly add to the butter mixture. Keep mixing until well combined. Slowly fold in Butterfinger® Peanut Butter Cups Minis.

 
3) Drop by rounded spoonful onto ungreased cookie sheet. Using hands, form into the shape of footballs. 

4) Bake for 10 minutes  or until set. Allow to cool for a while on the cooking sheet before transferring to cooling rack.

 
5) Once cool draw lines on cookies using white icing. Be careful – it may be runny as mine was and take a few tries to get used to!

 
This was actually my first time trying Butterfinger® Peanut Butter Cups Minis and to say I am a fan is an understatement. These are easily the best peanut butter cups I’ve ever had – creamy peanut butter covered in chocolate with that signature Butterfinger crunch. Yes please. And Edy’s has long been a family favorite of ours and the touchdown sundae flavor does not disappoint.

This is great for football parties – consider having a lasagna toppings bar where your guests can add the toppings they wish to their lasagna such as green peppers or pepperoni.

  12. what a great idea for the superbowl!! 🙂 i usually never host the party.. and our friend tells us we never have to bring anything.. but i'm always excited to see what everyone comes up with. maybe next time i'll have to do some football themed food like this.
