When I first became a mom something happened. All of a sudden I was so concerned with caring for my baby and making sure their needs were met that I stopped looking after my own. And I stopped eating lunch. Eventually I got back into eating lunch again – when Maddie Grace and I could sit down together and eat lunch. And then came baby #2. He’s amazing, and I wouldn’t trade him for anything in the world, but I’ve once again found myself not having the time to sit down and eat lunch. And I know moms of newborns aren’t the only ones to not eat lunch. I know plenty of people who work who don’t find the time for lunch during the day.
Lunch is so important. We all need it to give our bodies the energy to pull through the day. But so many of us just don’t think we have the time for it. That’s why I’m always on the lookout for quick and easy lunches that are also health conscious as I’m working on losing the baby weight from baby #2. That’s why I stock up on Healthy Choice Simply Café Steamers to eat for lunch throughout the week.
